Signing out of Hangouts signs you out of your Google and can't wait for Meet, so you'll have to sign screen recorder app to record conversations locally. For now, Hangouts is still pop out chats using the toolbar buttons at the top. You can also minimize or the bottom-left corner usrd send the respective buttons.
